amazing creamy goodness

I am and always will be a dessert-a-holic.  But the more i learn about commercial processing of milk the more i ask myself what else is in that creamy good-mess??  Today, by mistake, i found an awesome alternative that has put my mind to ease.

Lately i have been drinking coconut milk, from a carton. Pretty much the same price as milk but much better for you. Anyways as i emptied the last drop of milk out of the container this morning I noticed that the container was still heavy.

Being my curious self i cut the container open. At the bottom of the container lay about an inch of creamy coconut goodness.  i scraped this out, whipped it up with some cane sugar and vanilla. add a little corn starch if it needs to thicken up and Voila!! Vegan, nutritious, good for you, chemical-free, yummy whipped topping for my freshly made Wheat free Carrot cake muffins.

Moral of the story: Follow your curiosities and you might just come up with something great!
