Stoner Food #1: Vegan Chocolate and Peanut Butter Mousse

When i was in college stoner food was less of ‘food you eat when you are stoned’ and more of ‘the type of food that you crave intensely but want it to be easy to make’. Once in a while i get into my stoner food phases. Usually its on a sunday, after i have laid on the couch all day, reading or watching tv. An intense urge of wanting chocolate, pizza or Grilled Cheese sandwiches will hunt me down and not give up until i satisfy that craving.  Last night this feeling took a hold of my house mate and would not let up.  She is vegan and wanted chocolate something so bad, that she was willing to drive on the icy roads at night, to satisfy that craving.  I did not think it was a good idea for her to drive so i went to the fridge to survey what we had and came up with Vegan Chocolate and Peanut Butter mousse.  It was Fast and easy and within 10 minutes i was back on the couch enjoying my tv show.  Follow the recipe below to satisfy your vegan chocolate mousse cravings:)

I was fortunate that my roommate and i always keep a few cans of full fat coconut cream in the refrigerator.  The reason for this is so the coconut cream is solid “fats”, like your butter would be.

In a kitchen aid mixer: Whip 1 can of Coconut Cream (leave out the water).  You can store the water in a Tupperware container for another time.

1/4 C Cocoa Powder

2 T Vanilla Extract

Slowly add Powdered Sugar until you have reached the consistency and the texture desired

Fold in Peanut Butter

Scrap out of mixer, into a bowl and eat with a spoon. 

This recipe is also a great vegan icing recipe.

In this picture i added cocoa nibs for texture but it is not necessary.
